Recipe adapted from Eat with Clarity.
Ingredients:
- 1 lb. ground chicken
- 1 TBSP sesame oil
- 1 TBSP garlic, minced
- 2 tsp. ginger, grated
- 2 TBSP honey
- 2 TBSP peanut butter
- 2 TBSP tomato paste
- 1/4 c. chili paste (sambal oelek)
- 1/4 c. soy sauce
- 2 TBSP rice vinegar
- 1 1/2 c. water
- 12 oz. rice noodles
- Cilantro and peanuts to serve
- Top with bell peppers, snap peas, and/or cucumbers, julienned
Directions:
- Cook Noodles: Bring a large pot of water to a boil and cook noodles to al dente according to package. Drain and rinse under cold water and set side.
- Brown Ground Chicken: In a large sauté pan, heat sesame oil and then add the ground chicken. Cook, breaking up the chicken until browned and completely cooked through. If there is grease in the pan, use a paper towel to absorb the grease and then discard the paper towel.
- Make Sauce: Add the ginger and garlic to the ground chicken and cook for 1-2 minutes. Then add the honey, peanut butter, tomato paste, chili paste, soy sauce and vinegar and sauté for 1-2 minutes to let the flavors blend. Add the water and bring to a simmer and simmer for about 10 minutes to thicken.
- Add Noodles: Once sauce is mostly thickened, add the cooked noodles. The noodles will continue to help the sauce thicken. Simmer to allow all the flavors to blend. Garnish with cilantro, peanuts, and julienned bell peppers, snap peas, and/or cucumbers.
