Mediterranean Boursin Pasta

Recipe adapted from Food Dolls.

Ingredients:

  • 12 oz. protein pasta (reserve 1 c. pasta water)
  • 1 block of Boursin cheese
  • 4 garlic cloves, chopped
  • 8 oz. jar sundried tomatoes, drained
  • 1/2 c. Kalamata olives, sliced
  • 1 15 oz. can garbanzo beans, drained and rinsed
  • 2 TBSP olive oil
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. thyme
  • 5 oz. baby spinach
  • 3/4 c. Parmesan cheese, finely shredded + more for garnish
  • 1/2 c. heavy cream

Directions:

  1. Bake Sauce: Preheat oven to 425F. In a large baking dish or Dutch oven, place the Boursin cheese in the center, and then add the garlic through thyme. Cover and bake for 15-20 minutes until cheese is melty.
  2. Cook Pasta: Cook pasta in heavily salted water according to package. Reserve 1 c. pasta water and set drained pasta aside.
  3. Add Pasta, Spinach, Parmesan Cheese, and Heavy Cream: Remove baking dish from the oven and with the back of a spoon incorporate the melty cheese with the baked ingredients; then add the pasta, spinach, Parmesan cheese, and heavy cream, and toss to combine, adding reserved pasta water as needed. Garnish with additional Parmesan cheese, if desired.
