Verde Avocado Salsa

Recipe from Chef Helen Lampkin.

Ingredients:

  • 1 lb. tomatillos, husked and washed (core if large tomatillos), halved
  • 1 poblano chile, stemmed and seeded, rough chopped
  • 1-2 serrano chiles, stemmed
  • 1 small sweet onion, rough chopped
  • 2 garlic cloves, rough chopped
  • 1/2 c. cilantro, rough chopped
  • 1-2 avocados, petite dice
  • 3 limes, freshly squeezed
  • 1 tsp. salt, plus more to taste
  • 1 tsp. agave syrup
  • 2 tsp. olive oil

Directions:

  1. In a food processor pulse tomatillos through cilantro to desired consistency.
  2. Pour salsa into a mixing bowl and fold in avocado, lime juice, salt, agave, and olive oil.
  3. Taste and adjust seasoning.
