Broccoli Vegetable Casserole

Ingredients:

  • 2 10 oz. bags of frozen broccoli, cauliflower, and carrots
  • 1 12 oz. bag of frozen spinach, thawed and drained of excess water
  • Olive oil
  • 1 onion, minced
  • 4 garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 4 eggs
  • 1/4 c. matzo meal
  • 3/4 – 1 c. cheese, shredded

Directions:

  1. Preheat oven to 350F.
  2. Cook frozen broccoli, cauliflower, and carrots in microwave according to package; then in a food processor blitz veggies to a chunky consistency.
  3. In a medium bowl, add blitzed veggies and spinach.
  4. In a skillet, heat olive oil over medium high heat; then add onions and sauté until golden and then add the garlic and sauté for 1 more minute, or until garlic is fragrant. Add the onion and garlic to bowl with veggies; then add salt, pepper, eggs, matzo meal and shredded cheese, and toss to combine.
  5. Spray a 9×9 pan with cooking spray and add veggie mixture. Bake for 1 hour.
