Ingredients:
- 2 10 oz. bags of frozen broccoli, cauliflower, and carrots
- 1 12 oz. bag of frozen spinach, thawed and drained of excess water
- Olive oil
- 1 onion, minced
- 4 garlic cloves, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 eggs
- 1/4 c. matzo meal
- 3/4 – 1 c. cheese, shredded
Directions:
- Preheat oven to 350F.
- Cook frozen broccoli, cauliflower, and carrots in microwave according to package; then in a food processor blitz veggies to a chunky consistency.
- In a medium bowl, add blitzed veggies and spinach.
- In a skillet, heat olive oil over medium high heat; then add onions and sauté until golden and then add the garlic and sauté for 1 more minute, or until garlic is fragrant. Add the onion and garlic to bowl with veggies; then add salt, pepper, eggs, matzo meal and shredded cheese, and toss to combine.
- Spray a 9×9 pan with cooking spray and add veggie mixture. Bake for 1 hour.
