Ingredients:
Sesame-Teriyaki Dressing:
- 1/2 c. tahini
- 1/4 c. soy sauce
- 1/4 c. rice wine vinegar
- 2 TBSP maple syrup
- 2 TBSP sesame oil
- 2 garlic cloves, grated
Salad:
- 5 heaping c. Napa cabbage, chopped
- 2 c. shredded rotisserie chicken
- 1. c. carrots, matchsticks
- 3/4 c. green onions, chopped
- 3/4 c. cashews, roasted and salted
- 1/4 c. cilantro, chopped
- 1/4 c. mint, chopped
- 2 TBSP sesame seeds
Directions:
- Dressing: Combine all dressing ingredients in a glass jar or large liquid measuring cup; whisk until smooth.
- Salad: In a large bowl, combine cabbage, chicken, carrots, green onion, cashews, cilantro, and mint. Season salad components with a few pinches of salt. Pour dressing overtop and toss well to combine and top with sesame seeds.
