Chicken Cashew Crunch Salad

Recipe adapted from Dishing Out Health.

Ingredients:

Sesame-Teriyaki Dressing:

  • 1/2 c. tahini
  • 1/4 c. soy sauce
  • 1/4 c. rice wine vinegar
  • 2 TBSP maple syrup
  • 2 TBSP sesame oil
  • 2 garlic cloves, grated

Salad:

  • 5 heaping c. Napa cabbage, chopped
  • 2 c. shredded rotisserie chicken
  • 1. c. carrots, matchsticks
  • 3/4 c. green onions, chopped
  • 3/4 c. cashews, roasted and salted
  • 1/4 c. cilantro, chopped
  • 1/4 c. mint, chopped
  • 2 TBSP sesame seeds

Directions:

  1. Dressing: Combine all dressing ingredients in a glass jar or large liquid measuring cup; whisk until smooth.
  2. Salad: In a large bowl, combine cabbage, chicken, carrots, green onion, cashews, cilantro, and mint. Season salad components with a few pinches of salt. Pour dressing overtop and toss well to combine and top with sesame seeds.
