Couscous Salad

Serves 2.

Couscous Salad:

  • 1/2 c. uncooked pearl couscous
  • 1 mini cucumber, chopped
  • 2 red/orange/yellow mini sweet peppers, chopped
  • Handful of grape tomatoes, halved
  • Handful of baby spinach, chopped
  • 2 TBSP cilantro, chopped
  • 1/4 c. feta, crumbled

Dressing:

  • 1 TBSP olive oil
  • 1 TBSP lemon juice
  • 1/2 tsp. Dijon mustard
  • 1/2 garlic clove, grated
  • Salt and pepper, to taste
  • Honey, to taste

Directions:

  1. Couscous: Cook couscous according to package. Once cooked, set aside to cool.
  2. Veggies: Chop cucumbers and sweet peppers, halve tomatoes, and chop cilantro, and add to a serving bowl.
  3. Dressing: In a jar with a lid, add the dressing ingredients and shake to combine.
  4. Assemble: Add cooled couscous to serving bowl with veggies, add dressing and feta, and toss to combine.
