Couscous Salad:
- 1/2 c. uncooked pearl couscous
- 1 mini cucumber, chopped
- 2 red/orange/yellow mini sweet peppers, chopped
- Handful of grape tomatoes, halved
- Handful of baby spinach, chopped
- 2 TBSP cilantro, chopped
- 1/4 c. feta, crumbled
Dressing:
- 1 TBSP olive oil
- 1 TBSP lemon juice
- 1/2 tsp. Dijon mustard
- 1/2 garlic clove, grated
- Salt and pepper, to taste
- Honey, to taste
Directions:
- Couscous: Cook couscous according to package. Once cooked, set aside to cool.
- Veggies: Chop cucumbers and sweet peppers, halve tomatoes, and chop cilantro, and add to a serving bowl.
- Dressing: In a jar with a lid, add the dressing ingredients and shake to combine.
- Assemble: Add cooled couscous to serving bowl with veggies, add dressing and feta, and toss to combine.
