Focaccia Turkey Grinder

Recipe adapted from Pinch of Yum. No exact measurements, because it really depends on the size of your focaccia and how much you like on your sandwich.

Ingredients:

Sandwich Base:

  • Focaccia
  • Pesto, thin layer
  • Turkey slices
  • Provolone, Muenster cheese, or cheese you like

Sandwich Toppings:

  • Iceberg lettuce, shredded
  • Red onion, thinly sliced
  • Pepperoncini, sliced
  • Italian dressing
  • Dried oregano (about 1/2 tsp.)
  • Salt and pepper, to taste
  • Mayonnaise

Directions:

  1. Preheat Oven: Preheat the oven to 350F. Prepare a baking sheet with parchment paper or foil and set aside.
  2. Slice Focaccia: Keeping the focaccia flat, use a serrated knife to cut the focaccia in half horizontally. Lift the top half of the bread off and set to the side.
  3. Layer Sandwich: On the bottom piece of focaccia add a thin layer of pesto. Then add the turkey and cheese.
  4. Toast Sandwich: Place bottom piece of focaccia with pesto, turkey, and cheese on the baking sheet, and place the top piece of focaccia next to the bottom piece, cut side down, on the baking sheet. Toast in the oven for 6-8 minutes.
  5. Toss and Layer Greens: In a separate bowl, toss lettuce, red onion, pepperoncini, Italian dressing, and oregano. Season with salt and pepper. Arrange salad on top of the toasted sandwich. Add a layer of mayonnaise on the top piece of focaccia.
  6. Finish: Press the top part of the focaccia over the sandwich and cut into wedges!
