Ingredients:
- 2 1/4 c. oats
- 1 tsp. baking powder
- 1 tsp. baking soda
- Pinch of salt
- 1/2 c. olive oil
- 2 eggs
- 1 tsp. peppermint extract
- 1/4 c. maple syrup
- 1/2 c. milk
- 2 mashed bananas (or 1/2 c. applesauce)
- 3 TBSP cocoa powder
- 1/2 c. mini chocolate chips
- Optional top with crushed candy canes (they will absorb into the muffin after a day or so)
Directions:
- Preheat oven to 350F. Add muffin liners to a muffin baking pan and set aside.
- In a blender, add oats through cocoa powder and blend until combined.
- Pour into muffin liners and top with mini chocolate chips (add optional crushed candy canes). Bake for 18 minutes.
