Tofu Shawarma Wraps

Ingredients:

  • 12 oz. extra firm tofu, drained
  • 1 lemon, juiced
  • 2 TBSP shawarma seasoning
  • 2 TBSP olive oil
  • 3 garlic cloves, minced
  • 1 tsp. cornstarch
  • 1/2 tsp. salt
  • Pita
  • Garlic mayonnaise (mayonnaise and garlic, to taste)
  • Pickles, sliced

Directions:

  1. Press Tofu: Halve the tofu and wrap between a clean kitchen towel and place a weight on top for 15-20 minutes.
  2. Preheat Oven: Preheat oven to 400F.
  3. Season Tofu: In a large bowl, add the lemon juice through salt and whisk to combine. Using a Y peeler or mandolin, slice strips from the tofu and add to the bowl. Stir to coat.
  4. Bake and Broil Tofu: Line a large rimmed baking sheet with parchment paper. Add the seasoned tofu to the baking sheet and spread in an even layer. Bake for 15 minutes, stirring once at the 8 minute mark. After 15 minutes, turn your oven to broil and broil until edges are crispy. Watch closely so tofu doesn’t burn.
  5. Serve: Serve in a warm pita with garlic mayo and pickles.
