Ingredients:
- 8 oz. feta cheese
- 3/4 c. Greek plain yogurt
- 1 medium garlic clove, minced
- 2 TBSP olive oil, divided
- Salt, to taste
- Black pepper, to taste
- 6 TBSP pistachio, crushed
- Watermelon, chopped into 1-1 1/2 inch large bites
Directions:
- Whipped Feta: In a food processor add feta, yogurt, garlic, 1 TBSP olive oil, and a pinch of salt. Blitz until smooth, taste and adjust seasoning, then transfer to a bowl, and set aside.
- Watermelon Bites: Cut 1-1 1/2 inch thick slices of watermelon, and then cut into squares or use a cookie cutter to cut a circle or shape. Hollow a bit of the top of each piece of watermelon (using a spoon or melon baller) out so the whipped feta can be nestled into the watermelon. Spoon whipped feta into the top of the watermelon squares. Drizzle with olive oil, black pepper, and crushed pistachio.
