Mint Chocolate Chip Muffins

Ingredients:

  • 2 1/4 c. oats
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • Pinch of salt
  • 1/2 c. olive oil
  • 2 eggs
  • 1 tsp. peppermint extract
  • 1/4 c. maple syrup
  • 1/2 c. milk
  • 2 mashed bananas (or 1/2 c. applesauce)
  • 3 TBSP cocoa powder
  • 1/2 c. mini chocolate chips
  • Optional top with crushed candy canes (they will absorb into the muffin after a day or so)

Directions:

  1. Preheat oven to 350F. Add muffin liners to a muffin baking pan and set aside.
  2. In a blender, add oats through cocoa powder and blend until combined.
  3. Pour into muffin liners and top with mini chocolate chips (add optional crushed candy canes). Bake for 18 minutes.
