Kimchi Chopped Cheese Hoagies

Ingredients:

Gochujang Burger Sauce:

  • 3/4 c. mayonnaise
  • 1 1/2 TBSP gochujang paste
  • 3 TBSP dill relish
  • 1 tsp. smoked paprika
  • 1/2 tsp. granulated onion
  • 1/2 tsp. granulated garlic
  • 1/2 tsp. pepper
  • 1 tsp. rice wine vinegar
  • Kosher salt, to taste

Kimchi Chopped Cheese Hoagies:

  • 1/4 red onion, sliced thin
  • 1 lb. ground beef (or ground chicken)
  • 1 tsp. granulated onion
  • 1 tsp. granulated garlic
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. pepper
  • 1 tsp. Kosher salt
  • 7 slices of American cheese, divided
  • 1/4 head of iceberg lettuces, shredded
  • 1/2 c. kimchi, roughly chopped
  • 4 hoagie rolls, toasted

Directions:

  1. Gochujang Burger Sauce: In a small bowl combine mayonnaise through salt and mix to combine. Adjust seasoning, if necessary. Refrigerate until ready to use.
  2. Onion: Place sliced red onion in a small bowl and cover with cold water until ready to use. This process will tame the sharpness of the onion. When ready to serve, drain the onions.
  3. Chopped Beef: Heat a large skillet over medium high heat. Once hot, add the beef and quickly pat the beef into an even layer on the bottom of the skillet. Allow the beef to cook undisturbed for about 5 minutes to get a good sear. After 5 minutes, cut the beef into halves and flip and cook undisturbed for 3 minutes. Drain any excess fat.
  4. Add Seasonings to Chopped Beef: Add the granulated onion through salt and start to chop the beef up with a spatula. Continue cooking the mixture for a few more minutes; then add 3 slices of American cheese and mix until cheese is melted throughout the meat.
  5. Top with Cheese: Turn off the skillet and divide the meat mixture into 4 sections; top each section with a slice of American cheese. Cover the skillet and allow cheese to melt.
  6. Toast Hoagie Buns: Meanwhile, toast up the hoagie buns.
  7. Assemble Hoagies: Take a toasted hoagie bun and invert onto one of the meat mixture sections and scoop the section, cheese side down, into the hoagie bun. Top with shredded lettuce, kimchi, onion, and gochujang burger sauce.
