One-Pan Marry Me Chicken and Orzo

Recipe adapted from Kale Junkie.

Ingredients:

  • 1 1/2 lbs. chicken breast, cut into cubes
  • 2 TBSP olive oil
  • 6-8 garlic cloves, minced
  • 8 oz. jar of sun-dried tomatoes packed in oil and drained
  • 3 tsp. Italian seasoning
  • 3 tsp. paprika
  • 3/4 tsp. Kosher salt
  • 1 1/2 tsp. black pepper
  • 1 1/2 c. orzo
  • 3 1/3 c. chicken broth
  • 1 1/4 scant c. cream
  • 3 large handfuls of fresh spinach
  • 1 1/4 scant c. Parmesan cheese, freshly grated

Directions:

  1. Chicken: Heat a skillet over medium-high heat and then add in the oil. Once the oil is hot, add in the chicken and cook for 2-3 minutes, until the edges start to cook.
  2. Marry Me Sauce: To the skillet with the chicken add in the sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and black pepper, and cook for 3-4 more minutes.
  3. Add Orzo and Broth: Add in the orzo and broth and stir well. Reduce the heat to medium, then cover the pan and allow it to cook for 12 minutes, removing the cover every few minutes and stir, to ensure that the orzo doesn’t stick to the bottom of the pan.
  4. Add Cream, Spinach, and Parmesan Cheese: Once the orzo is cooked through, add in the cream and spinach and stir until the spinach is wilted. Finally, add in the freshly-grated parmesan cheese and stir. Taste and adjust seasoning.
