Ingredients:
- Sesame oil
- 5 garlic cloves, minced
- 3 green onions, sliced
- 1 TBSP ginger paste
- 2 TBSP sesame seeds
- 1 TBSP red curry paste
- 1 tsp. crushed red pepper
- 2 TBSP peanut butter
- Honey, to taste
- 1 can coconut milk
- 1 TBSP soy sauce
- Juice of 1 lime
- Salt, to taste
- Noodles, 4-5 portions
- Garnish with sliced green onions and sesame seeds and can add cooked tofu, chicken, fish, etc.
Directions:
- Cook Noodles: Cook noodles according to package. Drain and set aside.
- Make Coconut Curry Sauce: Heat sesame oil a skillet over medium heat; then add add garlic through honey and stir to combine. Once combined add the coconut milk and mix well into a creamy sauce; then add the soy sauce and lime juice. Taste and adjust seasoning. Let sauce come to a lively simmer then add the noodles and toss to combine.
- Serve: Garnish with green onions and sesame seeds and protein of choice.
