Firecracker Coconut Noodles

Ingredients:

  • Sesame oil
  • 5 garlic cloves, minced
  • 3 green onions, sliced
  • 1 TBSP ginger paste
  • 2 TBSP sesame seeds
  • 1 TBSP red curry paste
  • 1 tsp. crushed red pepper
  • 2 TBSP peanut butter
  • Honey, to taste
  • 1 can coconut milk
  • 1 TBSP soy sauce
  • Juice of 1 lime
  • Salt, to taste
  • Noodles, 4-5 portions
  • Garnish with sliced green onions and sesame seeds and can add cooked tofu, chicken, fish, etc.

Directions:

  1. Cook Noodles: Cook noodles according to package. Drain and set aside.
  2. Make Coconut Curry Sauce: Heat sesame oil a skillet over medium heat; then add add garlic through honey and stir to combine. Once combined add the coconut milk and mix well into a creamy sauce; then add the soy sauce and lime juice. Taste and adjust seasoning. Let sauce come to a lively simmer then add the noodles and toss to combine.
  3. Serve: Garnish with green onions and sesame seeds and protein of choice.
