Ingredients:
- 1 lb. frozen cheese tortellini
- 24 oz. marinara sauce
- 3 TBSP water
- 16 oz. ricotta cheese
- 12 oz. frozen spinach, thawed and squeezed dry
- 1 tsp. salt
- 3 c. mozzarella cheese, shredded
- 1/4 c. parmesan cheese, grated
Directions:
- Preheat Oven: Preheat oven to 400˚F.
- Tortellini: Spread the frozen tortellini on the sheet pan. No need to thaw.
- Sauce: Add 3 TBSP of water to the marinara sauce and stir or shake to combine; then pour the marinara over the tortellini. Use a spatula to toss the sauce with the tortellini to coat. Then spread the tortellini over the pan in a single layer.
- Spinach Ricotta Mixture: In a bowl, mix together the ricotta cheese, spinach, and salt until combined. Dollop mixture over the tortellini.
- Bake: Bake for 15 minutes, then remove the sheet pan from the oven and top evenly with mozzarella and parmesan cheese. Return to the oven for 5-8 minutes or until the cheese is melted.
