Sheet Pan Tortellini

Recipe adapted from Easy Family Recipes.

Ingredients:

  • 1 lb. frozen cheese tortellini
  • 24 oz. marinara sauce
  • 3 TBSP water
  • 16 oz. ricotta cheese
  • 12 oz. frozen spinach, thawed and squeezed dry
  • 1 tsp. salt
  • 3 c. mozzarella cheese, shredded
  • 1/4 c. parmesan cheese, grated

Directions:

  1. Preheat Oven: Preheat oven to 400˚F.
  2. Tortellini: Spread the frozen tortellini on the sheet pan. No need to thaw.
  3. Sauce: Add 3 TBSP of water to the marinara sauce and stir or shake to combine; then pour the marinara over the tortellini. Use a spatula to toss the sauce with the tortellini to coat. Then spread the tortellini over the pan in a single layer.
  4. Spinach Ricotta Mixture: In a bowl, mix together the ricotta cheese, spinach, and salt until combined. Dollop mixture over the tortellini.
  5. Bake: Bake for 15 minutes, then remove the sheet pan from the oven and top evenly with mozzarella and parmesan cheese. Return to the oven for 5-8 minutes or until the cheese is melted.
