Recipe adapted from Kim’s Cravings.
Ingredients:
- 1 lb. ground chicken
- 1/4 c. Parmesan cheese, grated
- 1/4 c. breadcrumbs or quick cooking oatmeal
- 1/4 c. marinara sauce
- 1/4 c. onion, chopped
- 2 garlic cloves, minced
- 1/4 c. parsley, chopped
- Salt & pepper, to taste
- 1 TBSP olive oil or avocado oil
- Marinara sauce to top burgers
- 4 slices Mozzarella cheese (you can use grated instead, if preferred)
- 4 hamburger buns
Directions:
- Burger Mixture: In a medium bowl combine ground chicken through parsley and season with salt and pepper and stir with a large spoon (or mix w/ your hands) until evenly mixed. Form the mixture into 4 patties.
- Cook Burgers: In a large skillet over medium-high heat, heat oil. Place patties in the skillet and cook until golden brown about 4 to 5 minutes per side. Alternatively, grill the burgers for 4 minutes per side or until no longer pink.
- Top with Sauce and Cheese: When burgers are cooked through, top each burger with marinara sauce and mozzarella cheese, then cover pan and cook until cheese melts.
- Toast Buns: While the chicken is finishing cooking, gently toast buttered hamburger buns in a 350°F oven until buns are warmed through and lightly crispy, about 5 minutes.
