Cauliflower Rice Tabbouleh Salad

Ingredients:

Tabbouleh:

  • 1 1/2 c. cauliflower rice, cooked and cooled
  • 1 1/2 c. grape tomatoes, chopped
  • 1 1/2 c. cucumbers, chopped
  • 1/4 c. mint, chopped
  • 1 bunch curly parsley, chopped
  • 2 green onions, sliced thinly
  • 1/4 c. hemp hearts or super seed mix

Dressing:

  • 3 TBSP olive oil
  • 3 TBSP lemon juice
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt, plus more to taste
  • 1/4 tsp. black pepper

Directions:

  1. Cook Cauliflower Rice: Cook cauliflower rice according to package. Set aside to cool.
  2. Tabbouleh: In a large bowl combine the tomatoes, cucumbers, mint, parsley, and green onions. Once the cauliflower rice is cooled, add the cauliflower rice and hemp hearts to the tabbouleh.
  3. Dressing: In a small bowl whisk together the olive oil, lemon juice, garlic powder, sea salt, and black pepper. Pour the dressing over the cauliflower tabbouleh. Toss to combine. Adjust salt and pepper to taste, if needed.
  4. Chill: If possible, cover and chill for 30 minutes to allow flavors to develop.
