Recipe adapted from the Natural Nurturer.
Ingredients:
- 1 TBSP olive oil
- 1 lb. ground turkey
- 1 tsp. onion powder
- Salt + pepper to taste
- 4 garlic cloves, minced
- 1 TBSP fresh ginger, grated
- 1 TBSP rice vinegar
- 1 TBSP sriracha
- 1/3 c. low-sodium soy sauce
- 2 tsp. toasted sesame oil
- 1 c. frozen riced cauliflower
- 12 oz. bagged coleslaw mix (or use the whole bag)
- 1 c. carrots, julienned or grated
- 1 c. edamame
- Green onions, sliced for garnish
Directions:
- Brown Turkey: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the turkey and use a wooden spoon or spatula to break up the meat as it cooks. Season with onion powder, salt + pepper. Cook until the turkey is browned and cooked through, about 7 minutes.
- Add Garlic and Ginger: Add the garlic and ginger cook for an additional minute or until fragrant.
- Sauce: In a measuring cup, mix together rice vinegar, sriracha, soy sauce, and sesame oil. Set aside.
- Add Veggies: Add the coleslaw mix, carrots, edamame, riced cauliflower to the skillet with the meat.
- Add Sauce: Pour the soy sauce mixture over the vegetables and meat.
- Continue Cooking: Stir everything together and cook for about 5 minutes or until veggies are tender. Garnish with green onions.
Extra Veggie Turkey Egg Roll in a Bowl
