Extra Veggie Turkey Egg Roll in a Bowl

Recipe adapted from the Natural Nurturer.

Ingredients:

  • 1 TBSP olive oil
  • 1 lb. ground turkey
  • 1 tsp. onion powder
  • Salt + pepper to taste
  • 4 garlic cloves, minced
  • 1 TBSP fresh ginger, grated
  • 1 TBSP rice vinegar
  • 1 TBSP sriracha 
  • 1/3 c. low-sodium soy sauce 
  • 2 tsp. toasted sesame oil
  • 1 c. frozen riced cauliflower
  • 12 oz. bagged coleslaw mix (or use the whole bag)
  • 1 c. carrots, julienned or grated
  • 1 c. edamame
  • Green onions, sliced for garnish

Directions:

  1. Brown Turkey: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the turkey and use a wooden spoon or spatula to break up the meat as it cooks. Season with onion powder, salt + pepper. Cook until the turkey is browned and cooked through, about 7 minutes.
  2. Add Garlic and Ginger: Add the garlic and ginger cook for an additional minute or until fragrant.
  3. Sauce: In a measuring cup, mix together rice vinegar, sriracha, soy sauce, and sesame oil. Set aside.
  4. Add Veggies: Add the coleslaw mix, carrots, edamame, riced cauliflower to the skillet with the meat.
  5. Add Sauce: Pour the soy sauce mixture over the vegetables and meat.
  6. Continue Cooking: Stir everything together and cook for about 5 minutes or until veggies are tender. Garnish with green onions.
