Mexican Cauliflower Rice

Recipe from Six Sisters Stuff.

Ingredients:

  • 1 TBSP olive oil
  • 1/2 c. onion, diced
  • 10-12 oz. frozen riced cauliflower
  • 2 TBSP tomato paste
  • 10 oz. Rotel diced tomatoes and green chiles, drained
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1 tsp. garlic, minced
  • Salt and pepper, to taste

Directions:

  1. Heat the olive oil in a large skillet over medium heat then sauté the onion until tender, about 5 minutes.
  2. Increase heat to medium-high. Add frozen riced cauliflower, tomato paste, tomatoes, cumin, chili powder, garlic, salt and pepper. Continue to cook for about 6-8 minutes, until the cauliflower is light and fluffy and the mixture is hot.
  3. Serve warm.
