Crunchy Thai Chicken Salad

Recipe adapted from Mallory the Dieticien.

Ingredients:

Salad:

  • 2 c. cooked chicken breast, shredded (about 1 lb. chicken)
  • 1 red bell pepper, chopped
  • 1+ c. of cole slaw mix, chopped 
  • 1/2 c. carrots, grated
  • 1 jalapeno, seeded and diced
  • 3 green onions, chopped
  • 1/4 c. fresh mint, chopped
  • 1/4 c. fresh cilantro, chopped
  • 2 TBSP peanuts, chopped

Dressing:

  • 1/4 c. fresh lime juice
  • 1 TBSP extra virgin olive oil
  • 1 TBSP sesame oil
  • 1 TBSP low sodium soy sauce
  • 1 TBSP maple syrup
  • 1 TBSP rice vinegar
  • 1 TBSP ginger paste
  • 1/2 tsp. garlic powder
  • 1/2 tsp. red pepper flakes
  • 1-2 TBSP peanut butter, optional

Directions:

  1. Dressing: Make the dressing by either stirring the ingredients in a small bowl or shaking them in a mason jar.
  2. Salad: To a large serving bowl add the shredded chicken, chopped cabbage, carrots, red bell pepper, jalapeño, green onion, mint, cilantro, and peanuts.
  3. Pour the dressing on top and give everything a good toss. Add more salt to taste.
